 Cold Pressing vs Hot Pressing: How Do These Two Oil Pressing Methods Affect Oil Quality?

In the edible oil processing industry, pressing is the oldest method of oil extraction and remains the mainstream process for premium oil production today. However, within pressing methods there is a critical dividing line – cold pressing and hot pressing.

The core difference between the two lies in whether the oilseeds are heat-treated before pressing and the difference in oil extraction temperature during pressing. This seemingly simple temperature difference fundamentally determines the nutritional retention, flavor profile, oil yield, and even market positioning of the oil.

A common but inaccurate statement is: “Cold pressed oil is always more nutritious than hot pressed oil.” The truth is far more complex. This article uses real data to break down the multi-dimensional impact of cold pressing and hot pressing on oil quality, and explains the configuration points of core oil pressing equipment at each stage.


I. Temperature: The Dividing Line Between the Two Processes

Temperature Standards for Cold Pressing

Cold pressing requires oil extraction to be completed at relatively low temperatures. The industry-wide standard is that oil extraction temperature should not exceed 50°C. Stricter cold pressing processes keep the pressing chamber temperature below 40°C, and some premium cold-pressed peanut oils even maintain temperatures below 45°C.

However, achieving true low-temperature pressing faces an engineering challenge: during operation of a screw oil press, mechanical friction between the material and the screw worm and bars inevitably generates heat. Studies show that even when classified as cold pressing, mechanical friction can cause local temperature peaks exceeding 70°C, depending on pressing conditions. When temperatures exceed 50-60°C, the risk of oil oxidation, hydrolysis, and degradation of key bioactive compounds increases significantly.

Therefore, a true cold pressing screw oil press must be equipped with a dedicated cooling system (such as a cooling jacket or screw cooling device) to actively reduce the temperature and maintain the pressing temperature within the required process range. For small-batch premium oils, a hydraulic oil press is also an ideal choice for cold pressing due to its slow pressing speed and low temperature rise.

Temperature Range for Hot Pressing

Hot pressing involves high-temperature heat treatment of the oilseeds before pressing. Typical processes include steaming and roasting, with treatment temperatures usually between 110-140°C. The oil extraction temperature during pressing is correspondingly higher, generally between 70-90°C, and the operating temperature of industrial-scale large screw oil presses can reach around 100°C.

The core purpose of high-temperature treatment is to reduce oil viscosity and disrupt the cell structure of the oilseeds, allowing the oil to be squeezed out more easily. This is also the fundamental reason why hot pressing yields significantly more oil than cold pressing.


II. Nutritional Composition: Not Simply “Cold Pressing Is Better”

Many people believe that cold pressed oil retains more nutrients than hot pressed oil. However, research data reveals a more complex truth.

Tocopherols (Vitamin E) and Phytosterols

Studies show that in a comparison of four extraction methods for rapeseed oil, solvent-extracted oil had the highest total tocopherol content (493 mg/kg), hot pressed oil was 388 mg/kg, and cold pressed oil ranged from 327-366 mg/kg. In terms of phytosterol content, solvent-extracted oil also led (178 mg/100g), while refined oil dropped to 129 mg/100g.

Research on sesame, peanut, oil-tea camellia seed, and rapeseed also produced similar conclusions: the tocopherol contents of cold pressed peanut oil, cold pressed oil-tea camellia seed oil, cold pressed sesame oil, and cold pressed rapeseed oil were 1.19, 1.17, 1.12, and 1.07 times that of hot pressed oil, respectively. The sterol contents of cold pressed sesame oil, peanut oil, oil-tea camellia seed oil, and rapeseed oil were 1.21, 1.29, 1.27, and 1.20 times that of hot pressed oil, respectively.

However, it is worth noting: in the rapeseed oil study, the tocopherol content of hot pressed oil (388 mg/kg) was actually higher than some cold pressed oil samples (327-366 mg/kg). This indicates that hot pressing does not necessarily cause significant loss of tocopherols; temperature, time, and raw material variety all have an impact.

Polyphenols and Antioxidant Activity

Hot pressing actually performs better in terms of polyphenols and antioxidant activity. Studies found that the total phenolic content and antioxidant activity (ORAC value) of hot pressed rapeseed oil were 3.1 times that of cold pressed oil, and DPPH free radical scavenging capacity was as high as 8.3 times. Research on sesame, peanut, oil-tea camellia seed, and rapeseed also showed that the polyphenol contents of hot pressed rapeseed oil, sesame oil, peanut oil, and oil-tea camellia seed oil were 4.76, 2.08, 2.99, and 1.17 times that of cold pressed oil, respectively.

High-temperature treatment promotes the Maillard reaction, generating new compounds with antioxidant activity. This is the key reason why hot pressed oil surpasses cold pressed oil in certain antioxidant indicators.

Summary: Trade-offs, Not Superiority

The oil yield of hot pressing is 10-15 percentage points higher than that of cold pressing. This means that for one ton of oilseeds, hot pressing can produce 10-15 kilograms more oil. For large-scale producers, this gap directly determines raw material costs and profit margins.

At the same time, the power consumption per ton of oil for cold pressing is about 40% higher than for hot pressing (2.5 vs. 1.8 kWh/kg oil), partly because the cooling system and lower pressing efficiency increase unit energy consumption.

The physical reason for the lower oil yield of cold pressing is that without high-temperature softening, the degree of cell wall disruption is limited, and the fluidity and release efficiency of the oil are inferior to hot pressing. Therefore, cold pressing usually requires a hydraulic oil press for slow pressing to maximize oil extraction under low-temperature conditions. Hot pressing, on the other hand, relies on the high-pressure continuous squeezing of a screw oil press, combined with the pre-treatment of a steam cooker, to achieve high oil yield.


IV. Flavor Profile: Completely Different Product Positioning

Flavor of Cold Pressed Oil

Cold pressed oil retains the original natural aroma of the oilseeds, with a fresh and mild taste. Because it is not heat-treated, cold pressed oil does not develop the roasted aroma from the Maillard reaction, but instead presents the flavor characteristics of the raw material itself.

Cold pressed oil usually only needs to be settled and filtered through a plate-and-frame filter press or vacuum oil filter before direct consumption, without refining. This allows it to retain more natural trace components and original flavor.

Flavor of Hot Pressed Oil

Hot pressed oil develops a rich roasted aroma and nutty flavor due to high-temperature steaming and roasting. This is the core reason why hot pressed oil is widely popular in traditional consumer markets (especially in Asia). For flavor-oriented oils such as peanut oil and sesame oil, the first reason consumers choose them is their “fragrance.”

Hot pressed crude oil usually needs to be processed through refining equipmentdegumming tanks, alkali refining tanks, bleaching towers, deodorization towers – to remove gums, free fatty acids, and pigments. The refined oil has a purer and more stable flavor. A supporting leaf filter is used for fine filtration after refining.


V. Oxidative Stability and Shelf Life

Because cold pressed oil is not refined, it retains more natural antioxidants (such as polyphenols and tocopherols), but at the same time contains more gums and trace moisture, which to some extent affects its oxidative stability. Studies show that cold pressed vegetable oils are rich in polyunsaturated fatty acids and bioactive polyphenols and are highly prone to oxidative deterioration. Polyphenolic substances degrade rapidly during storage; for example, p-coumaric acid can decrease by 87% within 14 days.

Hot pressed oil undergoes high-temperature treatment, has lower moisture content, and the Maillard reaction products generated during hot pressing have certain antioxidant activity, so its shelf life is usually longer.

Cold pressed oil requires stricter storage conditions – light protection, low temperature, and sealing. If the product is positioned for the premium market, it is recommended to equip light-protective packaging and a nitrogen-protected filling system, such as an automatic filling machine with a nitrogen flushing device.

Choose Cold Pressing If:
